Oat, Cranberry & Chocolate Cookies 

good cookie recipes are hard to come by. This recipe is full of goodness including cranberries, oats and good quality chocolate. These cookies are nourishing and make for a good healthy lunchbox snack, which is homemade rather than bought. They take no time to prepare and bake at all and they last the whole week.

- 1 cup plain flour 

- 3/4 cup rolled oats 

- 1/2 cup caster sugar 

- 3/4 desiccated coconut

- 1/2 cup dried cranberries, whole

- 1/2 cup chocolate, chopped

- 125g butter

- 2 tbsp golden syrup 

- 1/2 tsp bicarbonate of soda

- 1 tbsp boiling water


Preheats the oven to 180C. Line a large tray with baking paper and set aside. Combine the flour, oats, sugar, coconut, fruit and chocolate in a large bowl. In a small saucepan combine the butter and golden syrup over a low heat. Heat until melted and then remove from the heat. Stir in the combined soda and water. Add wet mixture to the dry ingredients and stir to combine.

Place heaped tablespoons of mixture about 5cm apart from each other on the prepared tray. Cook for approximately 12 minutes or until golden in colour. Transfer to a wire rack to cool. Enjoy this recipe.
