Chocolate Coconut Slice

chocolate and coconut are the perfect match, their flavours enhance one another to result in a rich and satisfying end product. This chocolate and coconut slice is the ideal accompaniment to a cup of tea to share for an afternoon snack.

- 150g melted butter, cooled

- 1 egg

- 1 tsp vanilla essence 

- 1/2 cup milk

- 1/2 cup brown sugar

- 1/2 cup plain flour, sifted 

- 1/3 cup self raising flour, sifted 

- 1/4 cup cocoa, sifted

- 3/4 cup desiccated coconut, extra for serving

for the chocolate icing 

- 3/4 cup icing sugar

- 1/4 cup cocoa powder, sifted 

- 20g butter, softened

- 1 tbsp boiling water 


Preheat the oven to 160C. Grease and line a slice tin approximately 12x18cm. Combine the melted butter, egg, vanilla and milk in a jug and whisk until combined. In a separate bowl combine all the dry ingredients: sugar, flours, cocoa and coconut and mix until incorporated. Whisk the wet ingredients into the dry, until the mixture is combined. Pour the mixture into the prepared tin and bake for approximately 30 minutes or until an inserted skewer comes out clean.

For the icing mix all the ingredient together until a smooth consistency forms. The icing should be of a thick consistency, to cover the back of a spoon. This means it will hold to the cake rather than run off the sides. Cut the slice into 12 equal long slices and sprinkle half of each piece with the extra coconut. Enjoy this recipe.
