Porridge with Caramelised Blueberries + Banana

This winter warmer is the ideal breakfast for those cold mornings. It is also a healthy and nourishing option, keeping you full for longer on those busy mornings. I love changing up the accompaniments with my porridge + this caramelised blueberries + banana is a match made in heaven, I got the inspiration from a porridge I had at Machine Laundry Cafe in Salamanca.

- 1 cup organic rolled oats (for this recipe I used the ones from my local Natures Works)

- 1 cup of full cream milk, more added if needed

- 1/2 cup boiling water

- 1 tbsp brown sugar

caramelised blueberries

- 1/2 cup fresh or frozen blueberries

- 2 tbsp boiling water

- 1 tbsp of raw sugar

- 1 tbsp maple syrup

to serve

- 1 banana, thickly sliced

- 1 tbsp brown sugar

- + additional milk 


Place the oats, boiling water, milk + sugar in a small saucepan over a medium heat. Cook for approximately 10 minutes or until the oats are thick + creamy. For the blueberries, place all ingredients in a flat fry pan + cook on a high heat for 5 minutes, until cooked + the sauce becomes syrupy. Serve oats, with blueberries, banana, brown sugar + additional milk if needed. Enjoy this recipe.
