Apricot Bliss Balls 

Apricot delight bliss balls are a new improved recipe for a healthier version of the apricot delights that you can typically find at the supermarket. These apricot delights are in the form of a bliss ball, due to being easier to eat + make. They have less sweetener + sugar in them than the store bought variety, meaning you do not have to feel guilty if you eat a few!

makes 18 bliss balls

- 280g Australian dried apricots

- 40g raw almonds

- 30g coconut, desiccated 

- 1/2 tsp vanilla bean paste

- 1/2 tsp maple syrup 

- 1/2 tsp coconut oil 

-pinch of cinnamon 


Place apricots in a bowl + pour over near to boiling water. Leave for 5 minutes to soften slightly. Drain water + dry off excess water with paper towel. Place apricots in a food processor with vanilla paste, maple syrup, coconut oil + cinnamon. Process until apricots are finely chopped. Add in the almonds + coconut + blitz until combined. Toll out teaspoon-teaspoon + a half balls + toss in extra coconut. Keep in the refrigerator, can be kept for up to a week. Enjoy this recipe.
