Chocolate & Hazelnut Squares
Chocolate and hazelnut seems to be the perfect combination, when it comes to baking. These chocolate and hazelnut cookies are the ideal for a morning or afternoon light snack.
- 90g butter
- 1 tsp vanilla essence
- 1/4 cup caster sugar
- 1 egg
- 1/2 cup hazelnuts, ground
- 3/4 cup plain flour
- 1/4 cup cocoa
- dark chocolate, melted and chopped hazelnuts to serve
Preheat the oven to 180C. Line cooking trays with baking paper.
For the cookies beat the butter, essence, sugar and egg in an electric mixer until combined. Stir in the ground hazelnuts, sifted flour and cocoa, until incorporated and it forms a dough. Divide the mixture in half and place each between two pieces of baking paper. Roll out the mixture until 4mm thick. Place on trays and refrigerate for about 30 minutes, or until the mixture becomes hard and easier to work with. Cut 4cm fluted squares from the dough and place on the prepared trays leaving about 3 cm in between each biscuit, to allow for spreading.
Bake the biscuits for about 8 minutes or until cooked. Cool on trays. For serving melt some dark chocolate and drizzle over each biscuit. Sprinkle the biscuits with finely chopped hazelnuts for decoration. Enjoy this recipe.
